Stack Your Way Chocolate Pancakes

Who doesn’t love warm pancakes and melted chocolate?

Light, fluffy and easy to make, these pancakes can be enjoyed classic, with chocolate chips, or made extra chocolatey.

Start with one simple batter, then customise it with our Cocoa Powder or 70% Dark Chocolate Chips. Perfect for flipping with friends, stacking high and letting everyone create their favourite.

INGREDIENTS

  • 200g self-raising flour
  • ½ tsp baking powder
  • 2½ tbsp caster sugar
  • 300ml milk
  • 2 eggs

Choose one of the following:

  • For chocolate pancakes: ½ tbsp Food Thoughts Organic Cacao Powder
  • For chocolate chip pancakes: A few handfuls of Food Thoughts 70% Dark Chocolate Chips

METHOD

  1. In a large bowl, mix together the self-raising flour, baking powder and caster sugar.
  2. For chocolate pancakes, add the Food Thoughts Organic Cacao Powder. For chocolate chip pancakes, leave the dry ingredients as they are and add the Food Thoughts 70% Dark Chocolate Chips later.
  3. Add the eggs and milk, then whisk until smooth.
  4. If making chocolate chip pancakes, stir in the Food Thoughts 70% Dark Chocolate Chips.
  5. Heat a little oil in a frying pan and spread it evenly across the surface.
  6. Pour the batter into the pan to form evenly sized pancakes.
  7. Cook for 2–3 minutes on the first side, or until bubbles appear and the pancake is firm enough to flip.
  8. Turn the pancake over and cook until fully cooked through.
  9. Serve with your favourite toppings, such as strawberries, chocolate sauce, maple syrup or fresh fruit.
