Brownie & Chocolate Strawberry Skewers

If you're heading out for a picnic this week, skip the supermarket dessert aisle and make these instead.

If you're in charge of bringing something sweet, these brownie, marshmallow and chocolate strawberry skewers are guaranteed to disappear quickly.

Made with fudgy homemade brownies, marshmallows, and strawberries dipped in our 70% Dark Chocolate Chips, they're easy to make, easy to share, and a lot more fun than your average picnic dessert.

INGREDIENTS

For the Brownies

  • 50g plain flour
  • 25g Food Thoughts Organic Cacao Powder
  • 125g butter
  • 125g Food Thoughts 70% Dark Chocolate Chips
  • 2 eggs
  • 140g caster sugar

For the Chocolate Strawberries

  • Extra Food Thoughts 70% Dark Chocolate Chips, melted
  • 1 punnet of strawberries

To Assemble

  • 1 bag of marshmallows
  • Wooden skewers

METHOD

Brownie Method

  1. Preheat the oven to 180°C and line a square baking tin with non-stick baking paper.
  2. Melt the butter and Food Thoughts 70% Dark Chocolate Chips together, then set aside to cool slightly.
  3. Sift the Food Thoughts Organic Cacao Powder and flour into a bowl. Add the eggs and caster sugar.
  4. Mix until combined, then add the chocolate and butter mixture and stir until smooth.
  5. Pour the brownie mixture into the prepared tin.
  6. Bake for 35–40 minutes. For slightly gooey brownies, reduce the baking time slightly.
  7. Leave to cool completely before cutting into small squares.

Chocolate Strawberry Method

  1. Melt the extra Food Thoughts 70% Dark Chocolate Chips in the microwave until smooth.
  2. Dip the strawberries into the melted chocolate until coated.
  3. Place in the fridge until the chocolate has set.

To Assemble

  1. Thread brownie squares, chocolate-covered strawberries and marshmallows onto wooden skewers.
  2. Serve immediately or chill until ready to enjoy.
