Healthier Chickpea Brownies

These healthier cacao chickpea brownies are rich, fudgy and satisfying, thanks to a blend of protein-packed chickpeas and Food Thoughts Organic Cacao Powder

Chickpeas add natural fibre and texture, while cacao brings that deep chocolate flavour we all want and a little extra goodness along for the ride.

Cacao is naturally rich in antioxidants and minerals like magnesium and iron, which is why it's often called a superfood. It's an easy way to add more depth (and benefits) to everyday bakes, without changing how you bake or sacrificing flavour.

INGREDIENTS

  • 1 x 400g can chickpeas, rinsed and drained
  • ½ cup Food Thoughts Organic Cacao Powder
  • ⅓ cup maple syrup or honey
  • ¼ cup nut butter (peanut, almond or cashew work well)
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • ¼ tsp salt
  • ¼ cup Food Thoughts 70% Dark Chocolate Chips or chopped nuts (optional)

  • 8x8-inch baking dish or square baking tin
  • Food processor or high-speed blender

METHOD

  1. Preheat the oven to 175°C and line an 8x8-inch baking dish or square baking tin with parchment paper.
  2. Add the chickpeas, nut butter, maple syrup, Food Thoughts Organic Cacao Powder, vanilla extract, baking powder and salt to a food processor or high-speed blender.
  3. Blend until completely smooth and creamy, scraping down the sides as needed. If preferred, leave a few small chickpea pieces for added texture.
  4. Fold in the Food Thoughts 70% Dark Chocolate Chips, or reserve them to sprinkle over the top before baking.
  5. Pour the batter into the prepared tin and smooth the surface with a spatula.
  6. Bake for 20–25 minutes, or until the top is set and a knife inserted into the centre comes out with a few moist crumbs attached.
  7. Leave to cool completely in the tin for at least 1 hour before slicing and serving. This helps the brownies firm up and prevents a crumbly texture.
