No-Bake Date Granola Bars

If you love dates, you need to try these no-bake date granola bars. Chewy, chocolatey, and the kind of snack that mysteriously disappears.

A drizzle of melted 70% dark chocolate chips is the perfect finishing touch — and it's worth using the good stuff! Choosing good dark chocolate is basically a label-reading game. Aim for 70% or above, and if the ingredients list reads like an essay, put it back. Bonus points if it's made from single-origin Fino de Aroma beans, which are carefully selected from the world's top 8% quality cocoa, and that is exactly what we use in our Dark Chocolate Chips. Deep, rich flavour without any unnecessary add-ons.

INGREDIENTS

  • 12–15 pitted dates
  • 4 tbsp chia seeds
  • ½ cup Food Thoughts 70% Dark Chocolate Chips
  • 1⅓ cups gluten-free oats
  • 1 tbsp nut butter
  • Water, if needed
  • Extra Food Thoughts 70% Dark Chocolate Chips, melted, for drizzling

MADE WITH

EQUIPMENT

  • Baking tin
  • Blender or food processor

METHOD

  1. Line a baking tin with greaseproof paper.
  2. Blend the oats in a blender or food processor until finely ground.
  3. In a large bowl, combine the blended oats, chia seeds and Food Thoughts 70% Dark Chocolate Chips.
  4. Finely chop the dates and add them to the dry mixture. For extra stickiness, soak the dates in warm water for 10 minutes before chopping.
  5. Using a spoon, mix everything together until the mixture starts to clump. Add a few splashes of water if needed.
  6. Stir in the nut butter and continue mixing until the mixture holds together.
  7. Press the mixture firmly into the lined tin, spreading it evenly to the edges. Place in the freezer for 10 minutes.
  8. Remove from the freezer and slice into bars.
  9. Melt the extra Food Thoughts 70% Dark Chocolate Chips in the microwave and drizzle over the bars using a spoon.
  10. Allow the chocolate to set before serving.
