Choc Chip Orange Loaf Cake

This Zesty Choc Chip Orange Loaf is the ultimate way to welcome spring to your kitchen table. 

This loaf is incredibly moist, packed with fragrant orange zest, and finished with a crunch of crushed orange mini eggs — making it a beautiful (and easy!) addition to your baking plans.

The star of the show is our Organic 70% Dark Chocolate Chips. Because they're crafted from single-origin Fino de Aroma beans (representing the world's top 8% of cocoa), they offer a much more sophisticated, floral chocolate note that pairs perfectly with the zing of the orange.

 

INGREDIENTS

  • 175g self-raising flour (gluten-free self-raising flour if making gluten-free)
  • ¼ tsp baking powder
  • ¼ tsp xanthan gum (if making gluten-free)
  • 175g butter, softened (or hard margarine, dairy-free if necessary)
  • 175g caster sugar
  • 3 eggs
  • 1 tsp orange extract or orange juice
  • Zest of 1 orange
  • Food Thoughts 70% Dark Chocolate Chips

For Decoration

  • Food Thoughts 70% Dark Chocolate Chips, melted
  • A squeeze of orange juice
  • Crushed orange mini eggs

  • Loaf tin
  • Mixing bowl
  • Cooling rack

METHOD

  1. Preheat the oven to 160°C fan / 180°C. Line a loaf tin with baking paper.
  2. Add the butter, sugar and eggs to a bowl and combine. Add the flour, xanthan gum (if using), and baking powder, then mix until smooth.
  3. Grate the zest of one orange into the mixture and add a small squeeze of orange juice. Mix again, then fold in the Food Thoughts Chocolate Chips.
  4. Pour the mixture into the prepared loaf tin and smooth the top.
  5. Bake for 45–50 minutes until golden. Test with a skewer; if it comes out clean, the cake is ready.
  6. Leave to cool in the tin for 30 minutes, then transfer to a cooling rack.
  7. Once the cake has cooled completely, melt some Food Thoughts Chocolate Chips and stir in a small squeeze of orange juice. Drizzle over the cake.
  8. Finish by sprinkling over crushed orange mini eggs for decoration.
