RED VELVET CAKE – GLUTEN FREE

The main reason why Becky Cummings uses a mixture of cocoa and cacao in this red velvet cake is to reduce the sweetness in the cake – she much prefers dark chocolate, so for her having an overly sweet cake is not desirable.  Cacao obviously has health benefits too!
