What better way to show appreciation on Mother’s Day than a gift of homemade cacao & pistachio truffles that beautifully combine dark chocolate, cacao powder and cacao nibs? This recipe uses the zest of a lemon as a fabulous twist and companion to the dark chocolate as the citrus note lifts the chocolate flavour to make it a match made in heaven! The lemon also complements the richness of the Cacao Nibs and intensity of the Cacao Powder dusting. Charlotte’s truffles are quick and easy to make – if a bit messy – and look wonderful presented in a little gift box. Charlotte picked her gift box up at Hobbycraft and chose the purple tissue paper and ribbon to contrast with the bright green of the pistachios. These truffles travel well and last about a week… if you can resist them for long enough to give them!
